We call them " chicken chips " . After I roast a couple of chickens, I carefully remove the skin (so it's already cooked) and lay it on a broiler pan and bake at 325 for 15-25 minutes. I end up taking some out after 15 minutes and baking the thicker pieces longer. Break into chip sized pieces and store in a sealed ziploc bag.
