It will still make yogurt - everyone does that at some point -

it is just not ideal because it breaks the proteins in the milk

or something - but you don't have to reheat it, just use as

is, assuming you haven't done anything to make it unsterile

in the interim. You could always use that batch for

cooking, but it will still have a probiotic function, so you

don't have to.
