You can eat this with a little honey or make it into the cheesecake recipe in BTVC. On pecanbread.com there is a list of stages for introducing foods and also recipes by stages. Don't worry, the intro foods are not forever. It's great that you are feeling better. Yes, the diet does try one's patience, especially in the beginning. It does get more routine. I love the yogurt- and eat it all different ways. Once you can add nut butters, you can start making some goodies too. Hang in there! The only ways I've been eating it are in a smoothie with banana and almond butter, or just with banana in it. Unfortunately, I gag every time I eat just a plain banana, and it's actually because of the seeds in the middle, so I have to CORE MY BANANAS BEFORE I EAT THEM. So I stopped eating them except in banana pancakes and smoothies. I cooked fruit, grilled pineapple and apple slices, cooked pear and honey and mixed it into the farmer cheese as breakfast and snacks. Are you making the yogurt yet? It is also tasty with honey in the beginning, or mixed with a little farmer cheese and cooked fruit. You could start to saute ground meat with peeled, deseeded zucchini in olive oil with pressed garlic, campbell's tomato juice, cook to taste and then shred cheddar cheese on top ( sat and pepper to taste). I lived on that for awhile at first. As you progress and feel better, you will see it is worth it. It is a process. I was blasted tired of it after several months... 'cause I'd had gall bladder surgery and couldn't experiment, and the roasts were my husband's limitation! (He was tired of them, too!) The tiredness should ease -- it's a common symptom when you make a radical change in the way you digest your food. Elaine used to call it switching from rumen to human digestion. You can start adding cooked and peeled and de-seeded vegetables. And more meats. Everyone is different, but I tolerated well cooked applesauce, cheesecake and carrot souffle at first really well and then zucchini. Just take it slow adding, making sure you try something and wait at least 3 days to try something else while keeping a food journal of your symptoms. Zucchini basil soup from epicurious.com is great and as long as you are tolerating zucchini, it should be OK. Banana pancakes with cooked apples on top is wonderful. Core, peel and slice 1 apple into very thin slices, add 1 tablespoon butter to a small nonstick pot, add apple and stir well, add 1 teaspoon cinnamon (or to taste), and a little honey (if you are using it. at first I didn't). Cook the apples for about 20 minutes with the lid on and the temp on lowish. Stir every once in a while. Serve over the pancakes. Devine!!!! This is still one of my fave breakfasts. When you get a little further along, you can add a tablespoon of almond flour to the pancake batter and they really come out good. Mix 1 ripe banana with 1 egg until well blended (I put mine in a blender as I think the smooth texture cooks better.) Cook in a well buttered non stick skillet over medium heat until done. I make them small and they cook up nicely. I usually get 4 - 5 pancakes per batch. Have you tried boiled eggs? I lived off boiled eggs the first couple weeks then I moved into omelets (2-3 eggs, salt/pepper, and a slice of colby jack). It's one of my favorite desserts! Yogurt with a little honey has been one of my favorites since day 1, as has frozen yogurt (very high calorie when made with 1/2 & 1/2 yogurt). Substitute butternut squash for pumpkin in the Pumpkin Pie recipe in BTVC. I like to make deviled eggs a lot. Zucchini or crook neck squash with either butter, or cooked in olive oil with parmesan cheese is good. Souffle bread works well to make either a tuna fish sandwich, or egg salad sandwich. It makes a decent enough hamburger bun as well. Baked apples with a bit of butter, honey, and cinnamon is tasty. Lemon curd is really good too. Hope that helps a bit! Guest guest Posted September 2, 2009 Report Share Posted September 2, 2009 it is worth it so hang in - you may have times you're sick of what you're eating but as you add things thereis a lot of variety - if yeast isn't a problem (which my comp. pharmacist feels every intestinal issue is from yeast and it sure seems like it here) but you can certainly up the bananas and cooked pears/apples - once you can, add avocado -they're high in fat to feel full and good to travel with and make smoothies out of - avoc ban dil juice -yum! add pecan butter in there eventually - drink twice a day if needed - you will gain - takes time- hang in eileen almost 20 months scd > > > > Hi all, > > > > I've been reading loads of posts and I feel like I've come to the right place! > > > > I was diagnosed CD just two and a half weeks ago.
