I made the basic Honey muffins (use baking soda instead of baking powder) and the coconut milk pancakes. Both turn out quite fluffy and moist but not wet. I'll send you the muffin recipe by email. The book you mention, does it have a lot of illegals in it? Does it combine coconut flour with grains at all? I would love to learn to work with coconut flour.
