Re: almond flour or coconut flour?

I have had most success with the recipes in the cookbook Cooking with Coconut

Flour by Bruce Fife. I made the basic Honey muffins (use baking soda instead of

baking powder) and the coconut milk pancakes. Both turn out quite fluffy and

moist but not wet. I'll send you the muffin recipe by email.

I can't do nuts either and find coconuts don't bother me. Granted I 2 years

into the diet.

The book you mention, does it have a lot of illegals in it? Does it combine

coconut flour with grains at all?

I would love to learn to work with coconut flour.

I found the coconut flour from Digestive Wellness not to be as fine with Bob's

Red Mill.

Have you ever tried Bob's?
