Guest guest
Malic acid is converted to lactic acid which is legal--it's what's in the yogurt after the buggies eat the lactose. If citric acid is legal as an additive then malic acid should be as well IMO. They both do similar things and are both present in nature. Terry Malic acid Is Malic acid added to apple cider legal? I'm pretty much thinking not. http://en.wikipedia.org/wiki/Malic_acid Malic acid is an organic compound with the formula HO2CCH2CHOHCO2H. This dicarboxylic acid is the active ingredient in many sour or tart foods. Malic acid is found mostly in unripe fruits. Malic acid contributes to the sourness of green apples. Malic acid is present in grapes. It confers a tart taste to wine, although the amount decreases with increasing fruit ripeness. The process of malolactic fermentation converts malic acid to much milder lactic acid. Mara
