Some people hold that TJs coconut milk which has no illegals/guar gum is legal - but, like everything that is or may be borderline, it is a use at your own risk kind of thing. And I've seen it approved elsewhere on the net for SCD - but Marilyn would warn to be extra careful with it and if any symptoms begin, suspect that immediately. Well actually before that she would say, make your own! make your own! make your own! It's simply very finely grated coconut and coconut oil. The problem with canned coconut milk is that even if it doesn't say it has stabilizers, like guar gum, in it, most of them do. It's pesky, and makes it really hard to BUY something. True, but so far, I've only received a copy of one, count 'em, ONE physical letter for all these items that people use. Having been told by a major spice manufacturing firm that they would not give me a letter on several of their products, I no longer buy those products.
