Carrots, for example...carrot pancakes, nut free carrot muffins, roasted herb carrots, boiled carrots in a ginger honey sauce.I roast veggies - particularly carrots and zucchini and also sometimesapples in the pan along with whole chickens (last week I did halfa peach that was just sitting around - and yum). I drizzle on some coconutoil and the veggies and fruit absorb some of the flavor from the chickenand it comes out really good that way. Salt and pepper, some herbs. Carrot pancakes sound good. He eats just about all other veggies, fruits and some pretty interesting stuff. It's a bit ironic that the few things he doesn't like happen to be what he can eat right now.That's for sure! Major bummer for you guys, I guess. A ton of recipes have pureed squash or zucchini in them, like pancakes, muffins, meatloaf, etc..Zucchini especially doesn't have a strong flavor in these things. Since the site is designed for little kids on the SCD, it has a lot of tips and recipes dealing with kids who won't eat the early foods. They smelled great, but the texture/taste wasn't too good.If you ever make them again, try two eggs to one banana (helps it taste more like pancakes) and blend it in a blender (to make the texture smooth and yummy). You remind me of my kids, they amaze me with their willingness to eat a pecan muffin while all their friends are eating blue and red Spiderman cake!! It is what it is...and they would rather feel good and they are only 7 and 3 and you are only 15! Amazing. I would be happy to share any recipe with you...but I have to get my son to school first.
