Nut butters - How to know if ready?

Sorry to be asking all these questions. I go back to work tomorrow and won't be

able to get on here much and am trying to get everything planned for food for my

son while I'm at work and figure out what I can take for lunch.

I copied a bunch of recipes from pecanbread.com and a few other websites. Most

contain nut butter. We normally eat a lot of almond butter (Maranatha brand -

how do I find out if it's legal?), so I have it on hand. We won't be doing

peanut butter for a long time.

How do I know when I can start giving my son things baked with nut butter? He

doesn't really have a lot of symptoms and has no pain right now. This is our

9th day on the diet. It would open up a whole new world of food and ways to

help him put some weight back on, but I don't want to rush it and have to go

back to chicken soup and canned pears.
