I am trying to sort out what to make to satisfy a busy teenager, so I can totally relate and pack a daily school lunch, something I only did once or twice a week before and could just throw anything together. Once I get some of this down, I am going to have her start helping in the cooking, prep so she can make this once she is on her own. Ultimately I hope she can return to a somewhat normal diet after a few years of following this diet. One cookbook that friend gave me is RECIPES FOR THE SPECIFIC CARBOHYDRATE DIET, Raman Prasad. There are lots of good recipes in there. One in particular my daughter likes is butternut squash home fries. You cut the squash in chunks or strips cover in olive oil and sea salt and bake. They are yummy. We are doing something similar tonight with zucchini, though I am going to bake on a rack so some of the liquid fall into the pan, hopefully a crunchy result, , , we'll see. If I come across any specifically teen friendly items I'll let you know, and please likewise. I would not do this but for my friend who went on the diet about 7-8 months ago, looks and feels terrific and is completely med free. I just don't want my daughter on meds and facing surgery some day. . . she is on board with doing the diet, but it doesn't make it any easier. I'm really having a hard time knowing what might have sugar, even if it isn't listed, and figuring out what's legal that won't have sugar for sure. " , I will absolutely let you know if I hit on anything he especially likes. Good thing your daughter is on board. My son is too and I think it makes it easier in a way, just not with the getting started. One of the first things the doctor talked to me about while my son wasn't even awake after his testing was surgery. It scared me (and my son when I told him) enough that we are willing to do whatever it takes to avoid that. We can handle meds for a while, but my goal is to get him off of them and keep him off. So I just suck it up and hope I'll be able to eat more things soon. " Funny thing is, he's really not a picky eater. About the only things he won't eat are spinach, squash and cucumbers. He eats just about all other veggies, fruits and some pretty interesting stuff. It's a bit ironic that the few things he doesn't like happen to be what he can eat right now. He'll usually even eat stuff he doesn't especially like, but it's not going to happen with spinach and cucumbers and zucchini. My other kids tried them first and when he saw their reactions wouldn't even taste one. The second time, my husband tried one, screamed about how stupid this diet is and how disgusting it was and then there was no way my son would try one. (I have since given my husband suggestions on how to deal with food he doesn't like and to either get over it or not do the diet with us.) But, since you just can't afford to be picky during the early stages, I ate it anyway. Can you believe that it's now one of my favorite foods? A ton of recipes have pureed squash or zucchini in them, like pancakes, muffins, meatloaf, etc..Zucchini especially doesn't have a strong flavor in these things. So maybe you could try something like that? " He'll eat squash and stuff pureed and put into meatloaf or muffins. I've been doing that since all my kids were little to get more veggies in them. He just won't eat them straight up. On the other hand, I grilled zucchini for dinner tonight and my 12 year old son and I gobbled it up. I eat a whole lot more now than I did before going gluten free and having to find new foods to eat. I think my son will get there too. He's still in denial a bit and maybe a bit angry too. He already wasn't happy about being gluten free and this is a lot harder. Thank you EVERYONE who has chimed in with ideas! I definitely need the support! I eat practically the same ol' thing everyday, and it really doesn't bother me. And since I had a bowel obstruction last week, I'm not eating much beyond intro. I know someday I'll be able to expand my food choices, so for now, I just " suck it up " ! I also have the joy of a rare side effect from my allergy med (Zyrtec), I'm hungry ALL the time. This is certainly a different feeling, because I spent most of my life with very little appetite. So it's 11:30 at night, and I'm highly looking forward to breakfast already ;-).
