Since I cannot find coconut milk without additives, I make my

own. It is very simple: from Lucy’s Cookbook:

3 1/2 cups unsweetened shredded coconut (I find it in the bulk

section of Whole Foods)

3 1/2 cups water

In a saucepan, stir together coconut & water. Place over

medium heat, stirring occasionally. When mixture begins to simmer, remove pan

from heat. Allow to cool for a few minutes (I let mine cool 20-30 min.) Blend

in a blender or food processor for 1 ½ minutes.

Place a colander covered with a double layer of cheesecloth over

a bowl. Strain coconut mixture through cheesecloth, squeezing out as much

liquid as possible.

Stir before using to incorporate the cream, which will rise to

the top after setting.

Hmm, interesting. The guar gum in most coconut

milk is in there as an emulsifier. The TJ's " Lite " coconut milk isn't

labeled as having guar gum, but it sure is smooth and looks emulsified. I have

several cans of coconut milk that I bought in Canada that states " no sugar

or additives " on the label and it definitely is NOT emulsified - very

lumpy and separated. I need to find a number for the company and call to find

out for sure. We're mostly dairy free and I have used coconut milk for years in

things like cream soup and asian recipes. I miss it!
