You put the milk and starter in whatever containers or jars you want, and then stick those in the dehydrator. Would it still be a problem? Stainless steel dehydrators are worth your life in expense. ($6000....) You can make your yogurt in glass jars in the Excalibur, and the food need not touch the plastic. You can also obtain metal shelves for the Excalibur. Or put parchment on the plastic ones.
