Yes, you *should* be able to buy the aged cheeses listed in the book as well as butter in Safeway. Make sure it has no " illegal " additives added. Perhaps someone in Canada can help you out with specific brands? Just read the labels carefully. If you are unsure, write it down, don't buy it and type what you have found to the group (all the ingredients and brand name, maybe even a link) and one of us can help you know if it is ok! The butter ingredients should just be (pasturized) cream and salt (or no salt if you get the no salt added). You can find a list of legal cheeses on breakingtheviciouscycle.info. Just read the ingredients to make sure nothing additional is added. I don't have any cheese on hand to look at the exact ingredients, but it should be something like milk, enzymes, and salt. I think tto is and ok additive. It just enhances the cheesy orange color; though, I try to buy things with no additives as I don't know what I react to. You'll have to play around with cheeses just like everything else on the diet. Havarti is an often easily introduced cheese for most but I could not eat it at first. Colby jack was my first tolerated cheese and it was only about an ounce a day or I started having symptoms.
