DH loves ice cream but is not too fond of the taste of yogurt. The few times I tried making him SCD ice cream in the past it tasted too yogurty for him. So I'm hoping I just picked a bad recipe (don't ask me which one it was - it was years ago). I'm looking for your favorite ice cream recipes - one that you think tastes most like the real thing and not so much like yogurt.

Thanks so much!

Devorah,

I know EXACTLY how your hubby feels! I cannot eat yogurt. I just can't. Even

thinking about it makes me feel queasy. I tried those egg ice cream recipes and

they're fine when they're frozen but once they start to melt they get *really*

" eggy. " and it grosses me out. So I found a couple recipes for ice cream that I

really like. One uses coconut so I won't list that since there's a debate about

it (but for the record I've never had any reaction to it). One I tried today

was from Elena's Pantry:

http://www.elanaspantry.com/vegan-vanilla-ice-cream/

I just replaced the agave with honey and I added a little peppermint extract.

Super yummy!

What do you mean there's a debate about the coconut one? Do you

mean it uses commercial coconut milk, or for some other reason?

Because you can always just sub your own coconut milk.

Oh and look - here's an SCD pumpkin cheesecake recipe at her site

(just change out the agave nectar for honey). Yum. I'm going to try

that.

It's just full cream yogurt.

I ended up buying a double boiler, and am glad I did. There are some dessert

items (lemon curd, ice cream) that are a lot easier to make (read: there's no

risk of burning anything) with it. I think you can try rigging one with the pots

you already have though.

Creme Fresh is a French term for thick cream. For SCD this means SCD yogurt

made with full cream. If you have two sauce pots that can fit closely one on top

of the other, you can use them as a double boiler.

It's drained yogurt made from full cream.

If you don't have a double boiler, use a heavy-bottomed pan, and heat on

low heat, stirring constantly to be sure it doesn't stick or

burn.

I consider a large double boiler an indispensable tool for SCD

cooking.

I've tried several different ice cream recipes but also wasn't crazy about the

yogurt tanginess. My favorite has turned out to be either strawberry or cherry

ice cream.

2 cups heavy cream yogurt, not dripped

1 cup thawed frozen strawberries or dark cherries

1/2 cup honey

1 t. vanilla

Blend all ingredients together in a blender. Pour mixture into ice cream maker

and freeze per ice cream maker instructions.

For me, using whole cream combined with the fruit flavors and honey effectively

eliminate the tartness of the yogurt.

Just to note (for whoever originally asked) that CrÉme fraiche, however, a

SOUR cream, not " fresh " cream.
