I find buying dates from the bulk department to be challenging on this level.. but in the States it is very easy to find perfectly legal dates. Medjool are a type of date. They are delicious and totally legal! http://en.wikipedia.org/wiki/Phoenix_dactylifera Whole Foods has dates in their plastic containers and they use no coating.. My wife made me sticky date pudding for my birthday, and it was amazing, so I know why you want to find out about dates. What Elaine says in the book is a good rule of thumb: if the dates are loosely packed, and the ingredients just says dates, they should be okay. If they are chopped up already when you are buying them, and they stick together in lumpy mass, then usually illegals have been added to make them sweeter or more processable (starches OR sugars). So look for loosely packed. I was able to find some in teh dried goods section of Whole Foods, and that worked out great. They had the skins on them, and I think if you want to removed the skins, you pour boiling water over them, and then pass it through a food mill, then heat on teh stove to reduce teh water you added. Occasionally as a treat I would cut a medjool date in half and put a little bit of peanut butter in it. I use them a lot as sweeteners. So yummy!
