My mom makes a sorbet like dessert for Passover by using egg whites fluffed, with grape juice and lemon and sugar, of course... boil into a syrup on the stove then mix with the egg whites and freeze. Take out of the freezer and blend, the refreeze.

This could probably be made legal with honey instead of the sugar.
