If he can eat kale, simply brush leaves with olive-or other- oil, sprinkle with salt-preferably a coarse salt. They can be grilled on a pan outside, or in your oven. They crisp up into a very satisfying chip. Very yum. I've seen, in a food magazine, a photo of same made with rainbow chard, stem left on, and served upright in a long stemmed glass as appetizer, very nice presentation. I did make them with chard once.
