Damifino. I think I would maybe cook the egg in a very thin layer and

then dehydrate on around 140F until very crisp. Then powder it in a

blender or food processor.

I have no earthly idea. Trying to do research on this would be good, but

the difficulty is that almost all commercial egg stuff includes illegals,

and therefore, it's impossible (for me) to say how long it would last. I

wish I knew. It IS hurricane season, after all!

I have a product called Just Whites in my pantry. It states it contains, as its

only ingredient, pasturized dried egg whites. Pasturizing might be the secret

to shelf life.
