Guest guest Posted September 26, 2009 Report Share Posted September 26, 2009 Here's a great recipe for Cinnamon Raisin Bread. It tastes great and slices beautifully. My kids and I loved it. Even my son who claims not to like raisin bread tried it and devoured three slices very quickly. Ingredients: 4 eggs 2.5 cups almond flour 1 tsp. vanilla 1 tsp. cinnamon (or a little more if you love cinnamon, I don't) 1/2 cup (or more) raisins 1/2 tsp. baking soda 1/2 tsp. apple cider vinegar 3/4 tsp celtic sea salt (use less if using regular salt) 2 tbsps. honey 2 tbsps. water Method: Preheat the oven to 300 degrees. Line a large loaf on the bottom with parchment and grease well all over. Mix all the ingredients very thoroughly with a mixer or hand blender. You could even use a food processor. Mix in raisins with a spoon or spatula. Pour into the loaf pan and smooth top. Bake for 45 minutes or until golden brown and firm to the touch. Cool in pan for 20 minutes and on a plate until it reaches room temp. Then slice thinly with a serrated knife. This bread is great toasted with butter on it, or even plain.
