I am asking because I recently bought an Excalibur dehydrator and would like to try making jerky. Thanks! I left it in the freezer for another two weeks, assuming it had already been frozen at least a week. Three weeks in the freezer kill off some of the bacteria it might have picked up in the processing. Then I defrosted it in the fridge, I sliced it no thicker than 1/8 " narrow slices, taking the skin off and discarding it as I went along. I marinated the slices in a health-foods amino acids extract and salt type of tamari (wheat-free) sauce for 48 hours. Then I pressed it between thick paper toweling to remove the marinade. I salted it with sea salt and put it on a dehydrator rack with a layer of baker's parchment under it. I set the thermostat at 115 degrees Fahrenheit and let it run for 4 hours, turning it once after three hours. I have 4 servings of raw dried lean meat from the duck, and a big pot of broth for cooking things for my husband. He can eat cooked things. I placed each serving in its own sealed baggie after the meat was room temp again, then I placed the four servings in a bigger sealed baggie and put them back in the freezer for this year's holidays. I know that raw foodists use flax seed a lot but since that's not legal on SCD I haven't managed to make a raw bread yet. I did figure out that butternut seeds (soaked in lemon juice to make it more digestible) can work as an alternative but that's a LOT of butternut squash to open!
