Do others use it?

Kim, I've used them for 5 years. Both the 3 strain culture for yogurt and acidolphilus. Katy

Custom Probiotics has some great stuff.

owner of the company has very definite ideas on good probiotics and has

confused some folks by insisting that certain strains are SCD legal when

they are not. (He knows probiotics; is not as familiar with SCD as we

There was also some question as to whether the Custom Probiotics were, in

fact, truly dairy free -- I do not know if that question was ever

resolved.

Many people really like their regular yogurt starter. <g> I need to

get around to trying it.

Just remember to be firm about what you want/need. I expect you're good

at that where your boys are concerned!

They have to be careful over at PecanBread since there are so many newbies over

there and parents at their wits end as it is so overwhelming implementing this

diet with little ones..

A suggestion like this takes due diligence and some PI work..

So it is hard making blanket statements about legality or suggestions as to how

to proceed etc.

But I reckon you are already familiar with this kind of dance!

I was thinking of trying yogurt starter from them as well. I have recently

switched to a dairy free starter.

think I will try another day, when I am not so frustrated. I cannot handle the

stress right now :(

He just called me a " silly SCD person " who " knows nothing. " But he did not know

about PANDAS, and that stumped him. Oh well. Generally I don't do business with

insulting people, but my options are limited, and I will do anything to help

heal my boys.

Meantime, I will collaborate here, because Harry does not appear to be a

collaborator:

I'm thinking of having them do a DARIY FREE custom blend of:

L. Bulgaricus, and L. Acidophilus, L. Casei

Is there another strain that I should add for my fermentation experiment?

I suppose if they react with dairy symptoms, I can always use it myself to make

yogurt by adding in a smidge of plain S. Thermophilus. Sometimes I feel life is

just one HUGE experiment . . .

Yes, he is. Some people have recommended dealing with him only via

e-mail. My one experience with him was reasonably positive, as I

mentioned I was on SCD and doing very well, therefore I intended to stay

with the recommended probiotics. He did not, thereafter, try to talk me

into anything else. (It annoys me, though, that someone with an excellent

name -- my very pro-SCD husband is Harry! -- can be so rude!)

PANDAS, and that stumped him. Oh well. Generally I don't do business with

insulting people, but my options are limited, and I will do anything to

help heal my boys.

Poor customer service, I think. Well, at least, from my POV, with 30+

years in customer service issues. But -- you see -- he does not know

everything. Each of us is an expert on our own guts (or those of our

children). I shudder at Kim M's low fat SCD -- she probably gets twinges

at the thought of my high fat SCD. I read about people eating smoothies

with a couple bananas and a couple cups of other fruit and I flinch --

but those smoothies work for them. I can't eat consistently raw foods,

yet Ann does better on them because of other issues. That is why SCD is

so powerful -- it is flexible enough to accommodate these personal needs.

For your children, you are the expert on PANDAS. (I'm intrigued to learn

from YOU on this issue!) I have confidence that you will come up with a

system which will help your boys.

here, because Harry does not appear to be a collaborator:

I'm thinking of having them do a DAIRY FREE custom blend of:

I think those three should be fine. They're all SCD-legal. S.

milk-fermenting bacteria. I notice that Custom Probiotics does carry the

individual strains you need if they cannot do a custom mixture. It's

still $$$$. I note that their standard yogurt starter calls for .4 grams

for 2-4 quarts of milk, so my thought would be to start with .1 grams of

each of the three strains in your two quarts of nut milk + honey, and

then ferment. You could always increase it.

This is all very iffy: since I tolerate dairy just fine, I've never

gotten 'round to experimenting with nut milks. And with my mom as ill as

she is, it's unlikely that I will get to any protracted things.

But I think this is where I would be inclined to start.

Don't forget that you could also put small amounts of the probiotics

themselves in suitable foods to give to your boys, although if you can

use these as a starter, it will certainly be less expensive in the long

run.

I don't believe you have to add extra honey - as nut milk is routinely

made

with honey in the first place.
