I have canning jars and lids for

the pickles but I get different info from the people I ask. Anyone know

how to make these?

Posting my pickle recipe -- note: if you cannot find dilling cucumbers,

which I regularly cannot, I use a regular salad type cucumber, wash well,

and then cut it into spears, then place those in a pint jar and add the

p[ickling mixture. One decent sized cucumber makes enough spears for one

pint jar.

The hot dog buns... is there

some kind of special pan I need to make these?

No. You can make roll-ups out of the pecan souffle bread, which makes a

great bun for hot dogs. Or you can shape nut flour bread dough to the

size and shape of hot dog buns. I like the pecan souffle wraps better

because the nut flour bread is so filling I can't eat two buns-worth. I

did buy the hot dog pan from King Arthur flour, but it's currently out of

stock there. (King Arthur Flour has some really super baking pans, but

SCDers have to ignore all the mixes and most ingredients.)

Hot dogs... where do you buy the

casings? What do you use for the ingredients inside? Same for sausages...

anyone make your own?

Posting my hot dog recipe. I like the collagen casings because they store

well and there's no mess in using them. I also like fat hot dogs, so I

use the ones from Leener's

(www.leeners.com).

My husband was helping me make some of these, and I commented that now he

could have his beloved hot dogs again. He looked at me and said, " If

you think I'm eating commercial junk while you're eating good SCD hot

dogs, think again! " (This, of course, is why he was helping me...

mind you, this is the man who asked for hot dogs for his birthday dinner

last week!)

I tried finding a recipes list

on here but there is nothing listed under " database " or

" files "

No... I keep meaning to get some of the recipes posted, but....

Hello, I am not sure about the hotdog bun, but a Hotdog recipe can be found at

www.Breakingtheviciouscycle.info, look under the legal/illegal listing and

search for hotdog. On the right there is a link to the recipe. As far as

casings go, I buy them at www.MeatProcessingProducts.com. I bought my sausage

stuffer from www.Northerntool.com. The whole process is pretty easy actually.

Just take your time when stuffing. I have used the natural and collagen

casings. I prefer the collagen. Hope this helps.

Yep, that's my recipe. <g> Which I just posted to the

list.
