Assuming WE knew it in the first place. I confess, I hadn't thought of using the ground turkey... I bet my Mom would like that! (And I'm hunting for anything I can find to get some calories down her these days.) Just as an FYI, you can make your crepes in advance and put waxed paper between the crepes, then store in a suitable container or ziplock bag. Ditto your filling mixture. Then, if you have a rushed morning, you can grab crepes, fill them, and stick then in the oven or microwave to re-heat.
