This is my favorite, from Lucy’s Cookbook: (I double the

recipe, and add allot more garlic)

Italian Salad Dressing

3 cloves garlic, pressed

1 tsp salt

½ cup olive oil

½ cup mild oil (safflower, sunflower, etc)

2 Tbls apple cider vinegar

1/3 cup fresh lemon juice

freshly ground black pepper, to taste

¼ tsp oregano (optional)

Press garlic into a bowl. With the back of a spoon, mash salt

into garlic for a couple of minutes, until mixture turns to a creamy paste. Put

all ingredients into a jar and shake vigorously.

Keep refrigerated. Stir or shake just before serving, as

dressing separates quickly.

I make this up in a quart canning jar.

Lucy's cookbook has a terrific Itl. salad dressing recipe. Just made it for the

first time last week. It is easy and delicious!

I came up with this dressing during the 13 months my daughter was 'fanatical'

SCD. We ate it all the time and still do!! I realize many others probably make

it this way but I figured it out on my own. I can eat any dressing I want and

nothing tastes near as good as this homemade dressing!!

My recipe is very " by taste " but everyone raves about it! I make a huge salad

for the six of us. I don't measure anything because I just fill my small blender

or put in enough to fill about half of a full sized blender:

I throw in:

-60% olive oil - 40% red wine vinegar

-quarter to half small onion

-quarter to half celery stalk

-3 peeled garlic cloves

About a tsp of the following:

-marjoram

-Oregano

-tarragon

-thyme

-salt (maybe more if you like)

-Then I put in a piece of very well cooked sugar free bacon!(Mmmmmm)

For our salad I put in lots of fresh spinach, romaine, tomatoes, diced hard

boiled eggs, celery, tomatoes, cucumbers, broiled (still warm) diced chicken

breast and most importantly a few more crumbled slices of the well cooked bacon!

I've been wanting to some purple cabbage for color and crunch but keep

forgetting to buy it.

I absolutely love this salad more than any other!!

Sometimes I throw spinach right in the dressing to make it a pretty green. You

can put some lettuce into the dressing if you want it thicker.

Just have fun....taste as you go and enjoy!!
