TIP: One day I peeled zucchini but didn't have the energy to do anything with it, so I threw them into the fridge. I didn't even cover it. The next day I made soufflé from it and when I processed it in the machine, it didn't let out a single drop of water! It was spongy and dry and sort of evaporated a bit overnight!

I dry them crisp and store in plastic bags. For long-term storage, I'd

stash them in the freezer, but for a couple months, they're fine at room

temp. They will absorb moisture from the air and become leathery, but

that's OK if you are cooking them in a sauce or something.
