Most " bacons " pork or turkey, have lots of additives anyway. > PJ I know he doesn't have to have it, but it's an important ingredient in one of our family favorite breakfast casseroles. He can eat everything else in the casserole. I never buy the bacon with all the additives, just the kind from Trader Joe's that doesn't have nitrates or nitrites. But it does have some sugar, so I'm hoping to find something else that will work. If not, we'll just make the casserole with homemade sausage, which is good too. Add a tsp. of salt, a tsp. of minced garlic, and a bunch of oregano and basil. Sorry I don't really measure it. You can adjust everything according to your taste. Then I either cook it all crumbly or make patties or sausage link shapes and cook it in a pan. It tastes kind of like Italian sausage. It's good in omlets or along side eggs or wrapped up in thin egg crepes like burritos. Liz
