Most " bacons " pork or turkey, have lots of additives anyway. PJ > > I know the guidelines about bacon. I just can't bring myself to give my son anything with sugar in it - even if it is just once a week and cooked crisply. We don't eat pork, so the sugar free pork variety is out. Does anyone know of a turkey bacon that doesn't have sugar in it? He can eat everything else in the casserole. I never buy the bacon with all the additives, just the kind from Trader Joe's that doesn't have nitrates or nitrites. But it does have some sugar, so I'm hoping to find something else that will work. If not, we'll just make the casserole with homemade sausage, which is good too. Add a tsp. of salt, a tsp. of minced garlic, and a bunch of oregano and basil. Sorry I don't really measure it. You can adjust everything according to your taste. Then I either cook it all crumbly or make patties or sausage link shapes and cook it in a pan. It tastes kind of like Italian sausage. Or might there be some sort of smoked pork? I really don't know if Canadian bacon has sugar in it, either, just an idea, trying to think out of the box a little. I know he doesn't have to have it, but it's an important ingredient in one of our family favorite breakfast casseroles. He can eat everything else in the casserole. I was about to recommend that you find real prosciutto, which is just pork cured with salt, and bake that crisp. But you don't do pork. I wonder if you could get (or slice yourself) some really thin turkey slices, season them suitably, and then bake crisp for your " bacon.
