Guest guest Posted September 11, 2009 Report Share Posted September 11, 2009 Hi , Sure, I will try to be more exact about how I make them. OK, I'm using the blender. If I am making up some " just for now " , I will use a pint canning jar instead of the big glass jar for my blender. If I'm making a batch for popsicles I use the big jar. It takes several steps to do it my way and get everything well-blended. My efforts in this line remind me of Marilyn's list of what she tried on making the breads. What you are aiming for is not to add too much liquid but you need enough to get things to blend. At first I was adding the frozen berries first. This is the hard way. I had to stop and scrape down the sides, maybe add more juice. Sometimes it gets too thin. The reason I say " too thin " is that if it comes out very thick and puddingish, it is a creamier " ice cream " sort of thing. Don't give up if you can't have berries, there are other things to use, and I will say that the berry seeds (which don't seem to bother me) seem to get smaller and harder this way. I had hoped they'd sort of disappear! Anyhow, OK, I gave up on berries first and went to mango or peach/nectarine first. Peel in either case. These are soft and will pretty much blend by themselves. After this I will add berries if I'm using them. It's much easier to blend them in this way. Probably use a bit of juice. I would say quantities so far are: one mango or one large or two small peaches/nectarines, and a cup of berries. maybe 2-3 tablespoons of legal juice OK, now open the blender again and add a sliced banana. Or two if they are small. Now really blend it a bit more than you think it needs to be, just to get it all blended together. By this I mean, do it longer because I think it whips more air into the mixture, though I could be wrong. Now put into the popsicle molds if you have them. A friend of mine says she likes the smallest paper cups because they are easy to just tear the paper off as you are eating them and I'm going to try this. I put some extra in a square freezer container a time or two and it's a bigger area, even if only about an inch thick, and I have to take my largest, sharpest knife and saw off a piece or two to eat. The smaller molds of one or another kind are really better. I think you can use use more bananas and some juice if that's all you've got. Or just peaches or whatever. But the banana is always nice in these things because it's very creamy and filling. Does this help? I can go make some and measure what I use better if that would be a help. Could we get an exact way on how to make these please? Re:Popsicles recipes I made quite a lot of successful popsicles this summer. I used grape juice but cider should work as well. My general " recipe " was a handful of frozen berries or peach or mango, a banana, and enough of the juice to let the blender work. I have some of those popsicle molds and they work well. I think you could use any fruit that works for you. I've also made popsicles in the past just with juice and they freeze harder than those with the fruit in them; in other words, you'll have to nibble on the popsicle slower until it starts melting a little bit.
