Does anyone have a recipe for a fig newton type cookie? I just bought 2 kilos

of wonderful fresh figs and would like to make something similar to fig newtons.

Thanks!

Thanks , I saw that recipe but didn't know what to do about the syrups and the grapeseed oil which I can't find here. Should I use the same amount of honey to replace the syrup and can I use butter to replace the oil?

3/4 cup honey in place of the syrups sounds about right. You might even go down to 1/2 cup if you're concerned about too much sweetness.

Regarding the grapeseed oil, you can use any mild-tasting legal oil instead.  I like baking with Spectrum walnut oil.--

I'm not sure if oil converts 1:1 to butter, but I've converted butter 1:1 to oil and never had any problems.
