Guest guest Posted May 5, 2001 Report Share Posted May 5, 2001 Hi all, I have fallen in love with smoked salmon, but it is pretty pricey in the stores and even higher at sights I have located on the web. I have a moist smoker where you put water and wood chips in the bottom pan while smoking to keep the meats moist. I have smoked turkey, roasts and such but have never attempted to smoke fish. Does anyone have a suggestion? How long do you leave the fish in the smoker? And do any of you know where I might find Alder wood chips. I frequently see Mesquite chips, but I think the Alder give the fish a much better flavor, you taste the fish more than the smoke. When I lived in Washington we used to buy smoked fish on the Indian Reservations where they used Alder primarily. Anyone know of any tribes that might be on the web? I'm not very good at surfing yet and my limited skills have not resulted in any hits for any of the Washington tribes. Appreciate any information .. . . . Thanks.
