LOL. It's really like that joke about 12 blind men describing an elephant from the bits they are able to touch. And none of them are describing the same thing remotely. I'm sure that looked at narrowly from the perspective of PH, saturated fats are bad for you because they are often acid, not alkalinizing. But that is not the totality of health - and I find myself, no doubt not entirely for objective reason (I like fat!), not trusting the PH perspective when it comes to fats. Also, I'm surmising in the testing he is citing that they did not differentiate between people eating high protein with lots of preservatives and carbs and people on more of a restricted carb, no preservative diet.
