Guest guest Posted August 31, 2009 Report Share Posted August 31, 2009 Hey Marilyn, Is there a reason you chose pecan meal for your recipe as opposed to peanut butter or almond meal, other than just liking the taste of pecans and that it makes it a good beginner bread? IOW, I assume one might easily sub. other nuts or nut butters - I'm wondering if you have found them to work as well, or if you never tested them that way. Mara Well, first of all, pecan meal is what I had handy when I decided to experiment. <g> My next order of almond flour was on a truck somewhere between here and Salt Lake City. (I was planning to try some of the Honeyville.) Second, I've noticed that pecan bread tastes more like whole wheat to me, and my aim was to get a whole-wheat kind of bread because that's what we were eating before I went SCD. The fact the pecan flour is easier to digest didn't hurt, either. ly, I expect you could make it with any nut flour or nut butter. Almond flour works -- but I make so many things with almond flour that I wanted something DIFFERENT! I'm planning to try it with peanut butter, and then sprinkle some finely grated sharp cheddar in, bake it, and then try it, and see if I can't get a peanut butter and cheese cracker out of it.
