Guest guest
Liz, how wonderful that the noddles are such a success with your son! I am much enjoying zucchini now, which I haven't been able to eat for some years, but haven't tried the noodles yet. I don't have a mandolin, and I have wondered from Elaine's instructions to use a regular veggie peeler, but about how big ARE they? Perhaps the critical thing is, how thick are they? I might just try this tonight. PS. I'm getting zucchini from a friend whose DH is a fanatic organic gardener in his retirement. The one I got the other day weighed 8.5 pounds and is bigger than my thigh! (She said it sort of got lost in the garden for an extra day or two.) A friend gave me a very large zucchini (think plastic, toddler-sized, fat baseball bat) and I cut it into julienne strips with my new mandolin. Actually, that's my recipe, but the typesetter forgot my name. Zucchini range from 6 " to a couple of feet. I like the smaller ones because there are fewer seeds. The vegetable peeler works great for two people, but I can tell you from experience that if you're making them for a crowd, you'll likely want a mandolin. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund
Guest guest
You can also use a spirilizer. It's super quick and makes perfect noodles I use this one: http://www.amazon.com/World-Cuisine-Tri-Blade-Plastic-Vegetable/dp/B0007Y9WHQ/re\ f=sr_1_1?ie=UTF8&s=home-garden&qid=1252037134&sr=8-1 stacey > > > > > > > Liz, how wonderful that the noddles are such a success with your > > son! Guest guest
Thanks Mara. That spiralizer sounds very interesting! And I see from the pictures that I HAVE that julienne peeler! I did make the noodles last night and I just used my good old Feemster's Magic Slicer, and it worked fine, too, even being 50 years old! I think I want to try to dry the noodles out a bit more next time, though they were fine after sauteeing.
