I'm very into pancakes. In addition to the nut pancakes you mentioned, I make other kinds:

DCCC pancakes. Mix DCCC with egg, vanilla (and some nut flour if you can). You have to make them small or they will fall apart.

apple or banana pancakes. Just mix the fruit with egg (and nut flour if you can) and spices (like cinnamon with the apple)

butternut squash pancakes. Sometimes a mixture of squash and apple - yum.

You get the idea. :)

If you don't feel like making pancakes, you can do the squash/apple mixture (add egg, vanilla, cinnamon, nut flour, DCCC - you can totally improvise and use some or all of these ingredients). pour into a dish and bake it. You can make this ahead too.

(My son had a hard day yesterday, but is already getting a lot better - he has the flu and it seems to have upset his system. The B has just about stopped again though.)I'm hoping that I'll give someone some ideas by listing what we do, and I'd love to get ideas from other people too. I would add:

Zucchini muffins,

Frittata (eggs, onions, red peppers, spices or other vegetables of your choice

Fresh or baked fruits

Baked beans

prepared or cooked according to the Specific Carbohydrate Diet. Thanks for your

I love banana pancakes! I use two eggs to one banana to make it easier to flip.

I also add some nutmeg and cinnamon and cook them in butter and add some salt.

YUM.

I also love the banana pancakes. I make them in a little electric omelet maker

that I bought at Walgreens for under $10. I spray it with my mister of oil and

cook them about 11 minutes. I get two football shaped pancakes from one egg, one

banana and cinnamon. I top it with dripped yogurt and fresh berries. It is my

standard favorite breakfast.
