Re: penzeys new cinnamon/cardamom

I love cardamom. It is used in a lot of Scandinavian and Indian desserts. It has

a

heavenly aroma. I add it to my SCD cookies all the time and my kids love them.

We get the green pods and crush them in a spice/coffee grinder. if you can get

it powdered, that should be fine too.

Have you ever had chai? That typically has cardamom in it (along with other

spices.

I love Vietnamese cinnamon. It should work well for you.

Cardamom has an aroma that i would describe as sweet. Perhaps because

i associate it with dessert.

Eileen,

Cardamon is used in sweet and savory dishes in Indian cooking. I have seen

nutmeg used as a substitute if you are out of cardamon, but I personally do not

think there is much of a similarity. I agree, it is a heavenly scent, but very

strong in flavor! If you use freshly ground, you might want to reduce the

amount the recipe calls for. Ground cardamon will lose some of it's potency

over time when stored. We use the green pods as well. You will want to grind

only the small black 'seeds' from inside the pod though.
