My son (diagnosed with UC a couple of weeks ago) and I started the SCD

yesterday. I wasn't quite as prepared as I had hoped since we came back from

vacation later Saturday night than planned, but it went okay. I think that the

only thing we ate that wasn't on the introductory diet was some baked (fresh)

peaches sprinkled with cinnamon. Other than that, we had scrambled eggs,

chicken soup, chicken, canned pears(in their own juice)and some apple cider.

I've read and re-read the book and spent hours on the main website and on

pecanbread.com. The book doesn't talk about " Stages " , it just says to " go slow "

when adding new foods. I can't find anywhere that the book says to add just one

new food at a time, except when you're going off to add one new food a week.

After we spend a couple of days on the introductory diet, how long should we

spend in Stage 1? He doesn't have much diahrrea, mostly loose stools and some

blood in the morning. It's already gotten a bit better since his diagnoses -

probably a combination of the medication he's taking and the restrictions on his

diet -limited sugar and no dairy products in the past 2 weeks and introducing

SCD snacks and desserts. He's already gluten free.

I'm hoping that when he starts school on the 31st I'll be able to send some

things like muffins and cookies (we've already experimented with recipes that

turned out great) in his lunch. He's a football player and will be staying

after school for practice 3 hours every day and needs a significant amount of

calories. I'm still trying to figure out what he's going to take for main

courses that will pack easily. I finally had the whole gluten free thing down

pat and this is more of a challenge for packing lunches. Any good suggestions

for lunches for a 14 year old with a huge appetite?
