Hi, Ann,

I'm sorry this is too late for your dad's birthday, but I've always done these

veggies raw. I have used beef, but just last week I used ground pork of 8

ounces of it and the other pound beef and I was so surprised that it held

together so much better. Not sure why. Also, I added some allspice and cloves

which gave it a different flavor that we liked.

I also like the recipe for meatloaf in the Grain-Free Gourmet.
