Guest guest Posted October 6, 2009 Report Share Posted October 6, 2009 Okay, I finally made a coconut flour pancake that isn't so eggy and coarse that I wanted to toss it out the window. In fact, these are yummy. Until SCD I had no idea the lengths to which you could take the concept of a pancake. Here it is for those of you experimenting with coconut flour. I use Tropical Traditions...it is SUPER fine, powdery even. Also, I doubled the recipe because my kids eat a lot. 6 eggs 6 tbsp. melted coconut oil 3 bananas 3 tsp. honey (I just eyeballed it) 1/2 tsp. sea salt 6 tbsp. coconut flour 1 tsp. baking soda blend bananas, eggs, oil and honey in food processor, add salt and soda, blend, add coconut flour (I also tossed in the contents of two caps of calcium, it can be cooked without any problem), blend and then let flour soak for five minutes I fry them in coconut oil on cast iron (the only iron my kids get besides red meat) and they are delicious.
