Fried apples are an old standby pre-SCD but I hadn't tried it with coconut oil...YUM! Naturally if you are eating butter (jealous I am, said Yoda) then trade it out for the coconut oil, though the subtle coconut flavor is pretty awesome. 10 apples (I am feeding 3 boys and a man, though) peeled, cored, sliced 2 tbsp coconut oil dash of cinnamon (to taste) drizzle of honey (to taste) melt the oil in a large skillet and fry apple slices on med high, stirring enough to prevent burning, when starting to soften and let out water turn it down a bit and cover to steam apples to desired level of cooked. When soft enough for you drizzle on honey and sprinkle the cinnamon and stir. SOOOOO easy and yummy.
