Guest guest Posted September 10, 2009 Report Share Posted September 10, 2009 Alyssa, Zucchini has just told me I can't eat it for awhile but for a few weeks here, I have really been enjoying it. For soup I just cut (in largish chunks) the zucchini and chopped an onion, added enough water to cook them thoroughly and simmered it all very soft. Let it cool some so the blender won't try to explode. Then blend it all and it makes a really creamy soup which I liked very much.
