RE: more newbie questions

Hi, I was diagnosed with Crohns disease in December of 04 after having a chronicly low iron level (my doctor thought I might be bleeding internally). I consider myself to have a fairly mild case as in general I eat whatever I want and lead a fairly normal life. I'm currently taking Pentasa twice a day. Within the last year I've been having some inflammation in my eyes (most likely related to the Crohns) which has been very concerning to me and because of that and wanting to do whatever I can to prevent myself from ever getting colon cancer, I've decided to try the SCD.

I'm planning on doing the intro diet listed in Elaine's book but I've noticed comments from people about advanced foods. Elaine talks about eating only cooked fruit/veggies initially but then she has the illegal/legal list so I guess I assumed everything legal was okay. How will I know when it's okay to eat something? The thought of not having bread is probably the hardest part for me so I got a bread recipe that has coconut flour in it. I was thinking of trying it toward the end of the 2nd week but someone wrote that coconut flour is advanced. Any suggestions? Pecanbread.com lists stage 1, 2, etc but doesn't say how long each stage lasts. It actually lists nut flours on stage 3, which if each stage is a week it's on week 3. I guess I feel like everything is kind of vague and I'm scared I'll make the wrong choice. I'm planning on doing a 2 week menu and thought I would email it to the group

once it's done.

With that being said, I had a couple more questions. Is non-stick cooking spray legal? Is all lunch meat illegal? I eat sandwiches for lunch frequently so that would really be a change in my routine.
