Marilyn,

My 4 yr old boys both follow dairy-free SCD. I would like to start making nut

yogurt for one of my sons, but he has severe neurological reactions to Strep

bacteria, so can't use the Pro-gurt starter.

I asked on Pecanbread about using acidophilus only to prepare the yogurt, and

the reply from one of the moderators was that per Elaine, you need Strep

bacteria to make yogurt, hence my type of acidopihlus-only strep-free yogurt

would not be legal. I inquired about the legality of acidophilus milk, and

received no reply.

@ pecanbread suggested diluted sauerkraut juice, but I can't get them to

tolerate the flavor. My boys used to ADORE yogurt, and cried for it when told

they could not have it . . .

I'm in a dilemma because I want to get to the point of further healing with him

so I can attempt to introduce goat milk yogurt made properly with Strep

bacteria. Right now he takes acidophilus and S. Boulardii.

The product you found below intrigues me because it contains 2 strains of

bacteria and lacks Strep. I want to try it to prepare the nut milk yogurt to see

if it ferments - what are your thoughts? Is there any reason that I am missing

as to why a fremented product prepared without the Strep bacteria would be

illegal or possibly damaging to the gut? I'm pretty sure, based on my reading

about fermentation that it will ferment in some manner . . .
