Re: recipe for any kind of noodles or pasta

In California, the diabetics, the weight-conscious and the scd folks all use the

stringy inside of a boiled spaghetti squash for the pseudo pasta. Put on your

best sauce!

I take a zucchini squash, peel it and slice it with a mandolin until you get to

the seedy core (freeze the cores for making zucchini basil soup yummmm). I have

2 different sized blades on my mandolin to make very skinny and a little fatter

(like fettucini). Some people have mentioned that they cook eggs in a thin layer

in a non stick skillet, cut them into appropriate sized strips and use them. I

never have though.

Mandolin - I can't find the one I have. I purchased it at wal mart, here is a

Titan Slicer - this is one of my favorite purchases. It peels so quickly and has

a julienne slicer that cuts my zucchini into tiny little strips.

I've done noodles at least 3 different ways. One was the spaghetti squash

method (the easiest). Another is to spiralize zucchini (idea stolen from raw

foodists) and lastly, an egg recipe. I don't have an actual *recipe* for it but

I mix up a bunch of eggs, occasionally with some almond flour) and pour a small

amount in a small pan and cook it like you would a crepe. Then I just cut the

crepes into thin " noodles. " It works great in soup (egg noodles! woo!) though

I always store them separately and put them in just before I'm going to eat.

Stacey, would you post that link for your pasta spiralizer again. The link you

gave me last year said it was discontinued, but I want to search it out as it's

about to get cold again and I'll be making soup a lot again and my daughter

likes " noodles " in her soup. I'm slowly trying to get her onboard with SCD while

she's with me. I have her helping me in the kitchen and that really helps

because she wants to eat what she cooks.

How's the UC? Did you ever recover completely from that flare? I haven't been on

Facebook much lately, but I haven't seen an update either. Off Prednisone yet?

It works really well for me. As for my UC, it's doing better. I'm down to 10

mgs pred every other day and I call my doc either on Friday or Monday with an

update and he'll change the dose again (maybe cut it out completely? eee!).
