Guest guest Posted August 26, 2009 Report Share Posted August 26, 2009 I take a zucchini squash, peel it and slice it with a mandolin until you get to the seedy core (freeze the cores for making zucchini basil soup yummmm). I have 2 different sized blades on my mandolin to make very skinny and a little fatter (like fettucini). Some people have mentioned that they cook eggs in a thin layer in a non stick skillet, cut them into appropriate sized strips and use them. I never have though. Here is a link to zucchini. Another is to spiralize zucchini (idea stolen from raw foodists) and lastly, an egg recipe. I don't have an actual *recipe* for it but I mix up a bunch of eggs, occasionally with some almond flour) and pour a small amount in a small pan and cook it like you would a crepe. Then I just cut the crepes into thin " noodles. The link you gave me last year said it was discontinued, but I want to search it out as it's about to get cold again and I'll be making soup a lot again and my daughter likes " noodles " in her soup. I'm slowly trying to get her onboard with SCD while she's with me. I have her helping me in the kitchen and that really helps because she wants to eat what she cooks. How's the UC? Did you ever recover completely from that flare? I haven't been on Facebook much lately, but I haven't seen an update either. Off Prednisone yet?
