It should not be too difficult to scan the letters and keep them in a file. I like to make my own food, but there are times when traveling for instance, or very busy, to know that there is something out there safe to eat! It would be a huge convenience. I'm just grateful to be able to use the Penzey's garlic and onions in a pinch, but I usually use fresh.
