Some commercial kefir contains inulin, which is an undigestible cellulose fiber which is anathema for me. I buy nearly all my food in bulk raw form directly from an agricultural source, except from the few things I can get raw, unradiated from the grocer's bulk bins. Then I process it into the form I need to use all by myself. When I began the BTVC diet, I was in a really bad way, was not sure I would ever be rid of the pain of pancreatitis, and be able to take in anything beyond Pedia-lyte. I graduated from that to broth, raw honey, and ripe banana for a week. I improved so rapidly that I could move on to the SCD second stage: mainly for me cooked nut bread, soft-cooked eggs and aged cheeses. I stayed there for quite a while until I fell ill with a hardened mucus from nose, throat and mouth throughout my system. I had no easy breathing, great difficulty swallowing and a very weak voice. Then I learned that I had an enzyme problem resulting from the damaged pancreas. So now I am on raw SCD. My health is strong; I have a voice and am in general very optimistic about my longevity ;-) Forgive my enthusiasm about my way of eating.....it is not for everyone.
