We're learning about carbohydrates, mono-di-poly-saccharides, etc in

science. I just read in my book that cellulose is a polysaccharide,

and now I'm confused, because polysaccharides are illegal and

cellulose is illegal, right? Also, it said glycogen is a

polysaccharide. I have no idea what that is, but the pic/example of it

was liver. Does that mean there are polysaccharides in the liver that

we eat on SCD? I'm confused.

Cellulose is a non digestible poly-saccharide for humans--we lack the bacteria to break it down, therefore it becomes 'roughage' and we excrete it. We can not consume digestible ( fermentable) poly- saccharides on SCD. Cellulose is part of every plant that we eat. It is legal.

Glycogen much more complex to discuss here, but, it is made primarily in the liver and stored there ( also other places); it is an energy molecule and is released when energy is needed in the body and converted into glucose to be delivered to the cells. Many different cells in the body store glycogen it is essential for life.

Maybe if you Google them, you will find better answers than mine. I took Biochem 30 years ago!!
