Sticky Date Pudding!!!!

Hello all, this is a recipe that has usurped all other favorite desserts in my

life. Quite a dessert.

Preheat oven to 300F.

8in sq. Baking pan with Parchment paper.

1 1/2 cups pitted dates

1/3 cup boiling water

3 oz. softened butter

1/2 cup honey

3 eggs

1/3 cup SCD yogurt

2 1/2 cups almond flour

1 1/2 tsp. baking soda

Caramel Sauce - 6 oz. butter, 1 cup honey

Process dates and boiling water. In bowl, mix butter and honey till creamy, add

eggs one at a time beating together. Pour into chopped date mixture with yogurt

and blend in processor. Mix almond flour and baking soda together then combine

with date mixture. Pour into prepared dish and cook 60 minutes, or until cake

feels spongy. To make Caramel sauce, heat butter and honey on medium heat in

saucepan for ten minutes. Will firm up when chilled.

Serve pudding with caramel sauce and french cream, or creme Anglaise, a real

custard treat. Three egg yolks and 1/3cup honey on top of double boiler, whisk

over simmering water til thick. Add tsp of vanilla extract, whisk one more

minute. Remove from heat and add 1 cup French Cream, cool.

Holy crap! It's amazing. This serves 8, so my wife and I had leftovers. What I

did was take a peice out of the oven, put some caramel sauce on it and put it in

a non-stick pan on the oven to reheat, medium low heat. This made little

crunchies that added a new texture and was incredible.
