Sour Cream?

Can I make sour cream if I start with organic full-fat cream (no additives) and

use good quality Creme Fraiche for a starter? I've done this before and left it

out on the counter for about 30 hours (about 72 degree temperature). My husband

would like sour cream and he's trying to stick to the diet too.
