Jay from Miss Robens is the cooking/baking expert, but if you are trying to

convert a non GFCF recipe to a GFCF recipe in baking, chances are you need

some xantham gum in your recipe. I don't have a gingersnap recipe but Miss

Robens makes a great gingerbread cookie mix and has great muffin mixes too.

You could also join the GFCFrecipes listserve for any recipes you may be

looking for! Lowery is the listowner and this group has a great

archive. Here is a tip that took me a long time to figure out... The best

GFCF flour is the Hagman blend which is rice flour, potato flour, and

tapioca flour. I use to mix my own but it always tasted gritty. You need

to get really fine rice flour to get rid of the gritty taste. I am the

world's worst baker/cook and I now buy my flour from Miss Robens and it

really does make a difference! I don't work for Jay, but I do love her

products!

Although Cara credits me as an expert (and I am flattered and thanks) I am

just like you. I have tried and tried and tried to make successful recipes

and managed (THANKFULLY) to finally learn from them. I would be happy to

help you troubleshoot but I can;t always keep up with the posted egroup
