Just make sure you get one that is casein free - I don't remember if they have two. For the icing I mixed confectioners sugar ( make sure it's JUST sugar), Fleischmans unsalted margarine and rice milk. I don't know how you would do the chocolate icing exactly, but you can find casein free chocolate chips at the Gluten free Pantry - maybe you could melt them. I served it for my son's birthday and no one could tell it was GFCF. 2 cups GF flour (rice/potato/tapioca mix) 2/3 cup unsweetened cocoa 2 tsp xanthan gum 1 tsp baking soda 1/2 tsp baking powder 3 eggs 1 2/3 cups sugar 1 tsp vanilla 1 cup mayonnaise 1 1/3 cups water Combine first five ingredients in a medium sized bowl. With electric mixer, beat eggs, sugar and vanilla until smooth. Beat at high speed until light (approximately 3 minutes). Reduce speed to low and beat in mayonnaise. Alternately beat in flour mixture and water. Grease and flour pan and bake at 350 for 30 minutes for pan and 20 minutes for cupcakes. (I have always had to bake longer -- just test for doneness for inserting toothpick. When it comes out clean cake is done) Chocolate frosting 1/2 cup margarine sub 1/2 cup Crisco 1 LB Confectioners sugar 1 tsp vanilla 2 TBL milk sub 2-3 TBL Corn Syrup 2/3 cup cocoa Combine margarine, shortening and vanilla Beat until very smooth Add cocoa Add sugar one cup at a time and beat until mixed. Beat for several minutes until all sugar has been added. (You may use entire pound or may not -- use until you have desired consistency) Beat in milk and corn syrup to desired consistency This frosting is great. It is like the middle of a twinky. Guest guest Posted February 20, 2001 Report Share Posted February 20, 2001 The problem from the Hellman's was the fact that I used a recipe out of a cookbook and that is a no-no so I was afraid possibly using a brand name was a no-no too. LOL Just silly rules. The proportions of the flour are: 2 cups rice or sorghum flour 2/3 cups potato starch 1/3 cup tapioca Enjoy. It is an excellent cake. The mixes sound great but because I waited until too late (bad Mom!) I will have to give those a try in the future. Misura the cake recipie was unbelieveable, better than any 'regular' cake I have ever tried. Thanks so much. Have you ever made it a different color and if so did you substiute something for the cocoa? I cheated and went with duncan hines frosting but will try the homemade version sometime. Try the homemade frosting sometime -- it is as unbelievable as the cake is. I'm glad you enjoyed it.
