Making pudding with DariFree

Help! I'm a new member to this group and love what I have learned so

far from everyone. My 11yo ds has just started this diet. He has been

casein free since Saturday. I live in Canada and have received

DariFree from Kirkman Labs. I've attempted to make Jello pudding using

DariFree, but it just doesn't set!!! I've tried using less liquid than

the pudding indicates, but still no success. Can anyone help?

I used almond milk instead because that's what my son drinks but the recipe

states Darifree.

2/3 c sugar

1/4 c Hershey's cocoa

3 tbsp. cornstarch

1/4 tsp.salt

Mix above ingredients in pan and then add

2 1/4 c milk (darifree)

Again, mix the ingredients with the milk.

Cook on med. heat until it comes to a boil, stir often, and allow to boil

for 1 minute.

Remove from heat and add 1 tsp. vanilla extract and 1 tbsp. margarine and

stir again.

Put in container and serve warm or chilled. Put plastic wrap on top so it

does not form a skin on top.

P.S. I halved this recipe and it made 4 little servings, just enough for my

son to eat.
